Mixed Vegetable Stew

1 teaspoon Oil (vegetable oil is fine)
Potatoes cubed into half inch pieces (2-3)
1-2 tablespoons Tomato sauce like Ragu
Mixed Vegetables (I used tiny cubed carrots, peas, corn and green beans)
half a teaspoon - ginger garlic paste
1/4 teaspoon Coriander Cumin powder
pinch turmeric powder
1 cup chicken stock or broth

Heat oil in a saucepan. Add the coriander cumin powder and turmeric powder and saute till fragrant (ensure not to burn). Add ginger garlic paste (be careful since the oil might sputter and scald you) and tomato paste. Add the potatoes next and saute lightly. Finally add the mixed vegetables. Then add the stock and bring to a boil. Cook until potatoes are tender making sure the liquid doesn't dry out. If required add more stock or water. Add salt to taste. I like to add salt last since many a times the broth, tomato sauce etc, have a little 'saltiness' in them and I don't end up over salting it. Cook it for a minute or two after adding the salt to let the flavors mingle

My little girl had this with Roti but it can also be had with bread. Simply dip bread or roti into the stew and enjoy !
